The judges present them with two exotic mushrooms to craft fabulous mold layers: Rhizopus oligosporus, grown in red beans; and koji mushrooms (technically, a fungus known as Aspergillus oryzae, flourishing in rice). These unique ingredients, commonly used in Asian cuisine, can add an exciting twist to their culinary creations.
