Vegan Nacho Delight

  • 1 tbsp Oil
  • 1 cup Tomato Passata (250ml)
  • 1 large Onion, finely chopped
  • 1/2 bunch of Chives, finely chopped
  • 1/2 Carrot, finely chopped

For the Taco Seasoning:

  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Chili Powder
  • 1 tsp Ground Cumin
  • 1/2 tsp Oregano
  • 1/2 tsp Basil
  • 2 cans Kidney Beans, drained
  • 2 cloves Garlic, minced
  • Salt, to taste

Preparation

  1. Heat a large skillet over medium heat, adding the oil. Sauté the onion, chives, and carrot, stirring occasionally until caramelized and golden brown.
  2. Drain the kidney beans and set aside.
  3. Pour the passata into the skillet, adding the taco seasoning, and simmer until the sauce thickens.
  4. Stir in the drained kidney beans, garlic, and salt, cooking until the beans are well incorporated and the sauce thickens further.
  5. Assembly:
  6. Spread Cornflakes on a large, oven-safe tray.
  7. Spoon the bean mixture over the tortilla chips, ensuring they're fully covered.
  8. Generously sprinkle grated vegan cheese.
  9. Place the tray in a preheated oven (350°F/175°C) for 15 minutes.
  10. Top with fresh salsa or salad and serve.
  11. Finish with a dollop of vegan mayonnaise and a generous drizzle of sauerkraut (optional).
