Throughout his illustrious career, Peymann held key leadership roles at several prestigious theatres. From 1974, he led the Schauspiel Stuttgart, gaining recognition for his classic productions. From 1979 to 1986, he directed the Schauspielhaus Bochum, which under his guidance became regarded as one of Germany's best theatres. His most notable tenure was at the Burgtheater in Vienna, which he headed from 1986 to 1999.
