Sweet Corn Ice Cream with a Twist: Caramelized Delight

Ingredients:
- 2 Egg whites, unpeeled
- 1 Cup Granulated sugar
- 2 Cups Heavy cream
- 1 Cup Whole milk
- 1 Cup Sweet corn kernels
- Kosher salt, to taste
- 1 Cup Caramel corn
- Lemon zest, optional

Preparation:
- In a large cast-iron skillet, grill the corn kernels over high heat, turning every 2 minutes, until charred (approx. 10-15 minutes).
- Transfer the corn kernels to the skillet and sprinkle ½ cup of sugar over them. Cook, stirring frequently, until golden brown (approx. 10-12 minutes). Set aside.
- Cut the corn kernels from the cobs and place in a medium saucepan. Fill with ½ cup of sugar, milk, and cream. Bring to a boil over medium-low heat for 5-7 minutes, stirring occasionally. Transfer to a heatproof bowl, cover, and refrigerate for 2-4 hours, or overnight.
- Using a slotted spoon, remove the corn kernels from the mixture and squeeze out excess liquid. Set aside.
- Whisk 1 cup of cream, the remaining ½ cup of sugar, and a pinch of salt in a medium saucepan. Heat over low heat, stirring continuously, until the sugar dissolves.
- In a separate bowl, beat the egg whites until soft peaks form. Gradually pour the warm sugar mixture into the beating egg whites, stirring constantly to temper the eggs. Continue beating until thickened and pale in color.
- Gently fold the corn mixture into the egg mixture and transfer back to the saucepan. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon (approx. 3 minutes). Strain through a fine-mesh sieve into a heatproof bowl and chill for 4 hours, or overnight.
- Churn the mixture in an ice cream maker according to the manufacturer's instructions.
- Place the churned ice cream in a freezer-safe container, cover, and freeze for 4 hours, or overnight, until firm.
- Just before serving, sprinkle the caramel corn on top of the ice cream. Garnish with optional lemon zest if desired.
