Quiche with Crispy Potato Skins and Bacon

  • 5 small brown potatoes
  • 4 strips of cooked bacon, crumbled
  • 1/2 cup grated Cheddar cheese (50g)
  • 1 cup 2% milk (240 ml)
  • 5 eggs
  • Salt, pepper, and grated Parmesan cheese to taste

Preparation

  1. Preheat your oven to 200°C (400°F). Slice the potatoes into quarters and place them in a single layer on a baking sheet. Season with salt, pepper, and Parmesan cheese. Bake for 15 minutes, or until crispy.
  2. In a large bowl, mix together the beaten eggs, milk, grated cheddar cheese, and cooked bacon. Season with salt and pepper to taste.
  3. Remove the potato skins from the oven and let them cool for a few minutes. Arrange them in a pie dish, overlapping them slightly. Pour the egg mixture evenly over the potato skins.
  4. Bake at 350°F (180°C) for 20 minutes, or until the egg is set and the top is golden brown.
  5. Allow the quiche to cool for a few minutes before slicing and serving. Enjoy with your favorite fruits and salad greens!
