Mushroom and Broccoli Delights in a Bunuelo Wrap

Yield: 6 Servings

Gather the Ingredients:

  • 1 cup (250 ml) of Milk
  • 1/2 cup (100 g) of Butter
  • 1 teaspoon of Salt
  • 1 teaspoon of Fresh Thyme
  • 1 cup (125 g) of Flour
  • 4 Eggs
  • 4 Cloves Garlic, Minced
  • Ground Nutmeg and Black Pepper
  • 1 cup (200 g) of Mushrooms
  • 1/2 cup (150 g) of Broccoli Florets

Get to Work:

  1. In a pot, blanch the Broccoli for 3 minutes in boiling water, then immediately transfer it to an ice bath. Drain and set aside.
  2. Place the Mushrooms on a baking sheet and bake at 180°C for 10 minutes. Let cool, then chop.
  3. In a pot, melt the Butter, then add the Milk, Salt, Minced Garlic, Nutmeg, and Black Pepper. Heat until it starts to simmer, then remove from heat and let it cool slightly.
  4. Whisk in the Flour, then let it rest for 4 minutes without removing it from the heat.
  5. Remove from the heat and transfer to a bowl. Add the Eggs one at a time, mixing well after each addition.
  6. Add the Chopped Mushrooms and Blanched Broccoli, then mix well.
  7. Form the mixture into small balls or patties.
  8. Heat Olive Oil in a pan and fry the patties until golden brown.
  9. Serve hot.
