Munich’s Carnival Unveils a Giant White Sausage-Stuffed Donut

Munich’s taverns have rolled out a quirky Carnival treat: a giant white sausage tucked inside a sweet donut. The unusual pairing breaks tradition by serving the sausage long after the usual midday cut-off. Behind the idea stands Thomas Vollmer, landlord of the Augustiner Stammhaus, who wanted a dish that screamed Munich.

The dish starts with a donut split in half. Inside goes a white sausage—around ten centimetres thick and forty long—far bigger than the usual breakfast variety. The dough itself is flavoured with sugar, vanilla, and orange, according to pastry chef Katharina Kreutzkamm-Aumüller. On top, a mix of Munich white sausage mustard and Düsseldorf’s Löwensenf adds a tangy kick.

This isn’t the first time Carnival has pushed donut boundaries in the region. Back in 2019, baker Stephan Fischer from Miesbach’s Bäckerei Fischer experimented with savoury versions. His creations included a liver cheese donut and a sausage donut loaded with pork, onions, ketchup, and curry powder. Even a Franconian butcher joined the trend last year with a bacon-jam donut. Munich’s economic affairs councillor, Christian Scharpf, gave the new dish his seal of approval after a taste test. The city’s taverns have now added it to their Carnival menus, offering a sweet-and-savoury twist on a local staple.

The white sausage donut ignores the old rule about eating sausage only before noon. It also continues Munich’s tradition of playful Carnival foods. With its oversized sausage and spiced mustard topping, the dish is set to draw curious diners during the festivities.
