Rohes' Methi Cheese Delight

Ingredients:

  1. 1 block of cheese
  2. 1 small onion, chopped
  3. 2 green chili peppers, sliced (use oil equivalent to their size)
  4. ½ teaspoon ground cumin
  5. Salt, to taste
  6. 1 teaspoon turmeric
  7. ½ cup coconut milk (120 ml)
  8. 1 teaspoon dried, crushed fenugreek leaves (Kasuri Methi)

Preparation

  1. Heat a wok or large skillet over medium heat.
  2. Sauté the chopped onion and sliced green chili peppers in a small amount of oil until softened.
  3. Add a drizzle of oil to a saucepan over medium heat, then add the sautéed onions and green chili peppers, along with cumin, salt, and turmeric. Stir-fry until fragrant.
  4. Add the grated or crumbled paneer cheese, and mix well.
  5. Pour in the coconut milk, reduce heat to low, and simmer until the desired consistency is reached. This usually takes 2-3 minutes.
  6. Turn off the heat and lightly crush the Kasuri Methi leaves between your hands on the saucepan's surface.
  7. Mix the crushed leaves into the mixture and serve hot!
