Spent Pancake Delight at Tea Time
Serves 2
- 6 Wholegrain Chapatis
- 125g Wholemeal Flour
- 0.5 tsp Paprika
- 0.5 tsp Turmeric
- 0.5 tsp Caraway Seeds
- 2 tsp Coriander Powder
- 0.5 tsp Chaat Masala
- 0.5 tsp Garam Masala
- 0.5 tsp Caraway Seeds
- 0.5 tsp Mustard Seeds
- 0.5 tsp Fenugreek Seeds
- 0.5 tsp Green Gram Seeds
- 1 pinch Asafoetida
- 2 tbsp Oil
- 1 tbsp Lemon Juice
- 1 tbsp Sugar
- 3 Green Chillies, finely chopped Fresh Coriander Leaves and Curry Leaves, to taste
- Salt, to taste
- 0.5 cup Water

Preparation
- In a bowl, combine wholemeal flour, spices, oil, lemon juice, sugar, and salt. Mix well.
- Gradually add water, stirring until the mixture is thick and lump-free.
- Mix in finely chopped green chillies and coriander leaves.
- Prepare a steamer by placing water in the bottom.
- Place the chapatis on a flat surface. Stack one on top of the other, repeating several times until you have 4 layers.
- Roll each stack into a log, ensuring all sides are well-coated with the flour mixture.
- Grease the steamer plate with oil and place the rolled logs inside. Steam until the outside turns golden.
- Let the logs cool and then cut into 2.5 cm pieces.
- In a heated pan, pour 1 tbsp oil. Add 1 tsp mustard seeds, 2 finely chopped green chillies, fresh curry leaves, and salt. Sauté until fragrant.
- Add the cut pieces and stir-fry for about 5 minutes until crispy.
- Serve hot with thinly sliced shallots and green chutney.
Note:
Feel free to substitute wholemeal flour with alternatives such as cornmeal, millet flour, chickpea flour, or sorghum flour. Adjust the amount of water accordingly. You may also skip the steaming process if you prefer.
