Las Vegas dining scene evolves with high-end openings and iconic closures
Las Vegas is preparing for a fresh wave of dining changes this year. New openings include a high-end Japanese concept and a celebrated ramen spot, while long-standing venues face closures. The shifts reflect both post-pandemic challenges and fresh partnerships in the city's food scene.
Two new dining destinations will soon arrive at BLVD. Tonshou, a Japanese fine-dining concept, is set to open by the end of summer. It will house Bar Centifolia, a Tokyo bar ranked among the world's best, known for its elaborate cocktail presentations.
Silverlake Ramen, a standout from Yelp's top 100 U.S. ramen list in 2025, will also join BLVD later this year or early next. The shop first launched in Vegas's Chinatown in 2023.
Meanwhile, some familiar names are shutting down. Guy Fieri's El Burro Borracho at the Rio has closed after struggling since the pandemic. Tony Roma's at Fremont downtown will follow on May 9, leaving just 10 U.S. locations remaining.
Giada De Laurentiis's restaurant at the Cromwell will stay open, even as the property transitions to the Vanderpump Hotel. Her latest venture, Sorella, opened in 2024, and no further projects have been announced as of March 2026. However, her recent partnership with PENN Entertainment hints at future developments beyond Caesars.
The upcoming months will bring a mix of closures and high-profile openings to Las Vegas. Tonshou and Silverlake Ramen will expand the city's dining options, while the departures of El Burro Borracho and Tony Roma's mark the end of an era for some. Giada's ongoing presence suggests stability amid the changes.
