Australian celebrity chef Josh Niland has closed his first international restaurant, Fysh in Singapore, after just two years. The decision comes as he refocuses his efforts on his Sydney flagship, Saint Peter, which recently moved to The Grand National Hotel in Paddington. Several spin-off projects have also been scaled back or shut down as part of this shift in direction.

Niland cited the intense competition in Singapore's dining scene as a key factor in the closure. The city's crowded market, packed with high-quality restaurants, made it difficult for Fysh to thrive. Balancing frequent travel between Singapore and Sydney while running Saint Peter and managing family commitments added to the strain.

Despite the setback, Niland's influence in the culinary world remains strong. His 'scale-to-tail' seafood philosophy has gained global attention, promoting sustainable practices in kitchens worldwide. Saint Peter, his Sydney-based restaurant, continues to earn acclaim, securing the 66th spot on The World's 50 Best Restaurants 2025 list.

Looking ahead, Niland has hinted at potential new ventures in London, New York, and possibly Spain. The move suggests a strategic pivot away from Singapore but signals ongoing ambition for international expansion.

The closure of Fysh marks the end of Niland's first overseas news, though his reputation as a pioneering chef endures. With Saint Peter's relocation and continued recognition, his focus now shifts to consolidating operations in Sydney.
