Serves 6

Italian Tomato Sauce

  • 1 tbsp extra virgin olive oil
  • 1/2 yellow onion, chopped
  • 4 cloves garlic
  • 1/4 tsp kosher salt, plus more to taste
  • 2 cans whole peeled tomatoes
  • 1/4 cup fresh basil, chopped
  • Black pepper, to taste

Chicken

  • 2 large eggs
  • 3 tbsp milk
  • 1/2 tsp kosher salt
  • 1 1/2 cups Italian seasoned breadcrumbs (170g)
  • 1/4 cup grated Parmesan cheese (25g)
  • 1/4 cup grated mozzarella cheese (25g)
  • 2 lbs chicken breasts, boneless and skinless, pounded thin to 6mm thickness
  • Olive oil for frying

Assemble

  • 1 3/4 cups grated mozzarella cheese (175g)
  • 1/2 cup grated Parmesan cheese (50g)

Preparation

  1. Preheat the oven to 350°F (180°C).
  2. Tomato sauce: In a large pot, heat the olive oil over medium heat. Add the onion and garlic, cook for 3-5 minutes until tender. Drain the tomatoes and save the liquid. Add the tomatoes, liquid, salt to the pot, and simmer for 20 minutes. Remove from heat, stir in the basil, and season with salt and pepper.
  3. Prepare the chicken: In one wide bowl, whisk the eggs, milk, and salt. In another bowl, mix the breadcrumbs, Parmesan, and mozzarella. Dip each piece of chicken in the egg mixture, letting excess drip off, then cover in the breadcrumb mixture, pressing to adhere. Shake off excess and place on a plate. Repeat with remaining chicken.
  4. In a large skillet, heat 2 tbsp olive oil over medium heat. Cook 2-3 chicken pieces at a time until golden brown, about 5 minutes per side. Drain on paper towels and repeat with remaining chicken.
  5. In a 22x33cm baking dish, spread 1/2 of the tomato sauce. Place half of the chicken slices on top. Cover with half of the mozzarella, then top with the remaining sauce, the rest of the chicken, and the remaining mozzarella. Sprinkle with Parmesan cheese.
  6. Bake for 20-30 minutes, or until cheese is melted and bubbly.
  7. Let the dish cool for a few minutes before serving with fresh basil, pasta, salad, and Italian bread. Enjoy!
