- 1/4 cup apple cider vinegar
- 1 chopped onion
- 1/2 cup orange juice
- 2 garlic cloves, minced
- 1 tsp ground ginger
Mango-Pineapple Sauce:
- 1/4 cup white rum
- 1 1/2 cups water
- 1 cup mango puree
- 1 cup pineapple juice
- 2 cups diced pineapples
- 3/4 cup honey
- 1 tbsp soy sauce
Preparation:
- Combine jerk marinade ingredients in a large bowl. Add oxtail and mix well, ensuring it is fully coated. Cover and marinate in the refrigerator overnight.
- Preheat grill to 275°F (140°C). Remove oxtail from marinade, letting excess drip off. Grill for about 2 hours, turning halfway through, until tender and caramelized.
