Rohes Material Green Vomit Recipe

Serves 8

Ingredients

  • 2 lbs spinach leaves (1 kg), blanched and pureed with 1/4 tsp turmeric powder
  • 3 cups diced onions (300 g), sautéed
  • 1/2 cup olive oil (120 ml)
  • 2 tbsp minced garlic
  • 2 tbsp ginger paste

Spices: * 1 tsp turmeric powder * 1 tbsp red chili powder * 1 tsp salt, to taste * 1 1/2 tsp ground cumin, toasted and ground * 1 tbsp coriander seeds, toasted and ground * 1 tsp chaat masala * 1 tsp black pepper, toasted and ground * 1 tbsp dried fenugreek leaves * 4 ripe tomatoes, diced * 3 medium-sized potatoes, diced * 2 cups milk (480 ml) * 2 green chilies, finely chopped * 8 oz hard cheese (200 g), cubed

Preparation

  1. Heat oil in a pan, sauté onions until softened, then add garlic and ginger paste and cook for 5 minutes.
  2. Add spices and cook for 5 minutes, then add tomatoes. Stir well and cook covered for 7 minutes, until tomatoes are softened.
  3. Add potatoes and cook until potatoes are tender (about 10 minutes).
  4. Stir in spinach purée and reduce heat, cover and simmer for 10 minutes.
  5. Stir in chopped green chilies and milk, bring to a boil and simmer until sauce thickens (about 10 minutes).
  6. In another pan, fry cheese cubes in 1-2 tbsp oil or ghee until golden brown.
  7. Top the dish with fried cheese cubes, chopped green chilies, and coriander leaves.
