Stir-Fried Green Apples with a Spicy Kick

Serves 4

Ingredients:

  • 1/2 cup of Mexican mixed vegetables (75g)
  • 6 cups fresh spinach (250g)
  • 6 cups kale (250g), coarsely chopped
  • 1 cup cubed tofu (100g)
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 2 tsp olive oil
  • 1 tsp maple syrup
  • Salt, to taste
  • 1 tbsp chili powder
  • 1/2 tsp mango powder
  • 1/3 cup nuts of your choice (40g)
  • 1/4 cup dried cranberries (35g)

Preparation

  1. Wash the apples, cut them into 1.9 cm cubes or thin slices.
  2. Heat the oil in a pan over medium-high heat. Add the cumin seeds and stir fry for a few seconds. Add the turmeric, chili powder, and a pinch of salt.
  3. Add the apple cubes to the pan and mix well. Cook for about 10 minutes, stirring occasionally, until the apples are golden brown.
  4. Add the Mexican mixed vegetables and spinach to the pan, and stir fry until the vegetables are tender.
  5. In a small bowl, whisk together the maple syrup, mango powder, and additional salt (if needed). Pour this mixture over the vegetables, stir well, and cook for another minute.
  6. Remove the pan from the heat and stir in the chopped nuts and dried cranberries.

Serve this stir-fried green apple dish as a side salad, over rice, or as a topping for grains. You can also mix it into a sweet-and-sour rice dish for added flavor.
