  • 1 teaspoon of turmeric
  • 2 teaspoons of chopped fresh cilantro for garnish
  • 2 cups of cooked lentils (like toor dal)

Directions:

  1. In a dry skillet, toast the masala ingredients, except for the coconut, for about 1 minute. Remove from heat and transfer to a blender. Add the grated coconut to the skillet and toast for an additional 2 minutes, then add to the blender. Pulse until a smooth paste forms. Set aside.
  2. In a large pot, bring water and tamarind paste to a boil. Add salt, turmeric, and 1 cup of masala paste. Bring to a simmer.
  3. In a separate skillet, heat oil over medium heat. Add sliced okra and stir-fry for 5-7 minutes until softened.
  4. Add cooked okra to the simmering sambar and bring to a boil. Reduce heat to low, add the cooked lentils, and let it simmer for 5 minutes.
  5. Garnish with cilantro and serve hot with rice.
