Gluten-Free Vegan Black Bean Burger Delight (Revised Version)

- 2 cans drained and rinsed black beans
- 1/4 cup gluten-free rolled oats
- 1/2 cup chopped walnuts
- 1 poblano pepper, finely chopped
- 1/2 small onion, finely chopped
- Juice of 1/2 lime
- 1 tab. onion powder
- 1 tab. garlic powder
- 1 teaspoon cumin
- 1 teaspoon dried dill
- 1 teaspoon fresh cilantro, chopped
- Salt and pepper to taste
- Optional: 1 tab. olive oil

Preparation
- Preheat your oven to 325°F (165°C).
- Spread beans on a baking sheet lined with parchment, baking for about 15 minutes until slightly dried. Save 1/2 cup of beans.
- In a food processor, combine remaining beans, lime juice, onion powder, garlic powder, dill, and cilantro. Process until smooth. Transfer mixture to a bowl.
- In a food processor, pulse poblano pepper, onion, oats, and walnuts in desired consistency. I prefer a chunkier texture.
- In a large bowl, mix bean mixture, oat-walnut mixture, saved beans, salt, and pepper. Mix well.
- Using a large cookie scoop, divide mixture into balls and shape into patties. Place on a parchment-lined baking sheet and chill for an hour.
- Heat up a lightly-oiled skillet on medium heat. Cook 2 chilled patties about 4 minutes on each side, until crispy. Repeat for remaining patties.
- Top with desired toppings and enjoy!
