What you'll need:

  • 2 Tablespoons of chopped garlic
  • 1/6 of a white onion, diced
  • 2 Cups of Fusilli pasta
  • 2 Tablespoons of Olive oil
  • 1/2 Cup of Tomato paste
  • 1 Cup of Water (reserved from pasta)
  • 3 Tablespoons of Wodka
  • 1/2 Cup of Soy or Almond milk
  • 1 1/2 Teaspoons of Baking powder
  • 1/2 Teaspoon of Ground black pepper
  • 1/4 Teaspoon of Salt
  • 1/2 Teaspoon of White miso paste
  • 1/2 Teaspoon of Sugar
  • 1/2 Teaspoon of Chili flakes (optional)

Instructions:

  1. Cook the Fusilli according to the package instructions. Be sure to reserve 1 cup of the pasta water before draining.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced onion and garlic, sautéing until soft and fragrant.
  3. Add the tomato paste, cooking for another 2 minutes until it becomes more vibrant in color.
  4. Deglaze the skillet with 1 cup of reserved pasta water. This will dissolve any flavorful bits stuck to the bottom of the pan.
  5. Stir in the Wodka and allow it to simmer until it reduces slightly. Add salt, black pepper, sugar, miso paste, and chili flakes (if using).
  6. Combine the baking powder and soy or almond milk. Slowly pour this mixture into your sauce while stirring continuously. This will help thicken the sauce without needing additional time on the stove.
  7. If your sauce appears too thick, add additional reserved pasta water, 1 tablespoon at a time, until you reach your desired consistency.
  8. Add your cooked Fusilli pasta to the skillet and toss until evenly coated in the vodka sauce. Serve hot, with a sprinkle of fresh parsley and vegan Parmesan cheese for an extra pop of flavor.
