French Onion Turkey Meatballs: A Tasty Twist
Serves 4
Meatballs:
- 2 lbs ground turkey (910 g)
- 2 large eggs
- 1 large yellow onion, finely chopped
- 1 1/2 cups Italian breadcrumbs (170 g)
- 1 cup shredded Gruyère cheese (120 g)
- 1/2 cup grated Parmesan cheese (55 g)
- 2 tablespoons minced garlic
- 1 tablespoon salt and pepper
- 2 tablespoons dried oregano
- 1 tablespoon dried thyme
- 1/3 cup olive oil (80 ml)
Sauce:
- 3 large yellow onions, thinly sliced
- 3 white onions, thinly sliced
- 1 stick of butter
- 1 cup Sherry (240 ml)
- 32 oz beef broth (945 ml)
- 2 tablespoons olive oil
- 2 tablespoons salt and pepper
- 1 tablespoon sugar
- 1 tablespoon minced garlic
- 1 1/2 tablespoons soy sauce
- 1 tablespoon fresh thyme
- 1 tablespoon dried oregano
- 12 large fresh basil leaves
- 5 cups shredded Gruyère cheese (500 g)
- 1 cup grated Parmesan cheese (125 g)
Preparation:
- Mix all the meatball ingredients in a large bowl, except for olive oil. Form meatballs of golf-ball size.
- Heat olive oil in a large skillet on medium-high heat. Add the meatballs, turning occasionally while cooking until golden brown on all sides. Remove past cooks breading, place them aside.
- In another skillet, melt butter on medium heat. Add sliced onions, olive oil, salt, pepper, and sugar. Cook for 30 minutes, stirring occasionally.
- Add Sherry to the onions and cook for 20 minutes more, stirring occasionally.
- Increase heat to high, add minced garlic, and cook for 2-3 minutes. Lower heat and add beef broth, soy sauce, fresh thyme, dried oregano, and salt and pepper. Simmer for 15 minutes, stirring occasionally.
- Add meatballs back into the sauce, stirring to coat. Cook for 5 minutes more until internal temperature reaches 165°F (74°C).
- Top each meatball with shredded Gruyère and Parmesan cheese, and broil until cheese is melted and golden brown.
- Serve hot.
