  • 1 3/4 cups chopped fresh spinach (70 g), divided
  • 1/4 cup chopped fresh basil (10 g)
  • 4 tbsp Campbell's FlavorUp!TM Caramelized Onions and Burgundy Wine Cooking Sauce
  • 1/4 cup grated Parmesan cheese (15 g), 2 tbsp reserved, plus more for garnish
  • 2 cloves garlic, minced
  • Zest of 1 lemon, no pulp
  • 1 tsp freshly ground black pepper
  • 1/2 tsp crushed red pepper flakes, optional
  • 1/4 cup extra-virgin olive oil (60 ml), divided, 2 tbsp reserved
  • 1 can artichoke hearts (175 g), quartered, stems removed
  • 1/4 cup crème fraîche (60 g) + 2 tbsp sour cream
  • 1 lb (450 g) dry fusilli pasta, cooked according to package instructions then drained and kept warm

Preparation

  1. In a medium bowl, combine 1-1/2 cups (10 g) spinach, basil, Campbell's sauce, 2 tbsp Parmesan, garlic, lemon zest, 1 tsp black pepper, 1/2 tsp red pepper flakes, 2 tbsp olive oil, and crème fraîche. Set aside.
  2. In a large skillet, heat the remaining olive oil over medium-heat. Add 1/2 cup (20 g) spinach and sauté until wilted, about 1-2 minutes. Remove spinach with a slotted spoon and set aside.
  3. In the same skillet, add the artichoke hearts and cook over medium-heat, stirring occasionally, until golden brown, 3-5 minutes. Transfer to a plate lined with paper towels to drain.
  4. In the skillet, add pasta, sautéed spinach, and cooking sauce mixture. Toss until well coated.
  5. Divide pasta among plates, garnish with golden brown artichoke hearts and additional Parmesan cheese.
