Five-Spice Chicken Bun Delight
12 Servings
For the Bread Dough:
- 1 cup warm milk (240 ml)
- 1/4 cup sugar (50 g)
- 1 packet active dry yeast
- 1 1/2 cups all-purpose flour (188 g)
- 3 1/2 cups whole grain flour (433 g)
- 3 tablespoons butter, melted
- 2 eggs
- 1 1/2 teaspoons salt
For the Five-Spice Chicken Filling:
- 3 tablespoons oil
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1 lb ground chicken
- 1 tablespoon Chinese Five Spice powder
- 1 tablespoon soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon sriracha sauce
- 1 tablespoon sesame seeds
- 1 cup chopped vegetables, such as bell pepper and carrot (optional)
Instructions:
Bread Dough Preparation:
- Warm the milk until it's just below boiling, then mix in sugar until dissolved. Let it cool to lukewarm and sprinkle the yeast onto the surface. Allow it to sit for about 10 minutes until it gets foamy.
- In a large bowl, combine the all-purpose and whole grain flours, making a well in the center. Pour the yeast mixture, melted butter, eggs, and salt into the well. Using a wooden spoon, gradually mix the ingredients and fold in the flour from the sides until a sticky dough forms. If necessary, add extra flour to prevent the dough from being too sticky.
- Turn the dough out on a floured surface and knead for 10 minutes until it becomes smooth and elastic. Place the dough in a lightly greased bowl, cover it with a clean cloth, and let it rise in a warm place for approximately 1 hour or until it doubles in size.
Five-Spice Chicken Filling Preparation:
- Heat the oil in a large skillet over medium heat. Sauté the onion until translucent. Add garlic and ginger, then cook for another 2 minutes.
- Add the ground chicken to the skillet and cook until browned, breaking up any large clumps with a spatula.
- Mix in the Chinese Five Spice, soy sauce, hoisin sauce, and sriracha sauce. Stir well until evenly coated. Cook for 3 minutes.
- Toss in the sesame seeds, along with the chopped vegetables (if using). Stir-fry for 2 minutes until the vegetables are tender. Remove from heat and set aside.
Preparing the buns:
- Preheat your oven to 350°F (175°C).
- Once the dough has risen, punch it down and turn it out onto a floured surface. Divide the dough into 12 equal pieces, forming balls about 2 inches (5 cm) in diameter.
- Flatten each ball slightly with your palm, then place about 1/3 cup (80 g) of the five-spice chicken filling in the center. Fold the edges of the dough up and around the filling, pinching and sealing tightly to enclose the filling.
- Place the filled buns onto a greased or parchment-lined baking sheet. If you prefer, you can brush them with an egg wash for a golden brown color.
- Bake the buns in the preheated oven for 20-25 minutes, until golden brown. Allow them to cool for 5 minutes before serving.
