- 1 lb (454 g) boneless, skinless chicken breast, sliced thinly
 - 2 tbsp fajita seasoning
 - 2 tbsp olive oil
 - 8 oz (240 g) mushrooms, sliced
 - 1.5 cups (340 g) cooked quinoa
 - 1/4 cup (65 g) salsa

Preparation:
- Rub the chicken with fajita seasoning and let it rest at room temperature for 30 minutes.
 - Heat a large skillet over medium heat, adding 1 tbsp of olive oil. Cook the seasoned chicken until it's nicely browned, approximately 5 minutes. Remove the chicken from the skillet and set aside.
 - Add another tbsp of olive oil to the same skillet. Add the sliced mushrooms, season them lightly with salt and pepper, and cook until they're tender, about 4-5 minutes.
 - Mix the cooked quinoa with some salsa in a bowl.
 - If you'd like, warm up your tortillas.
 - Assemble your fajitas by placing the chicken and mushrooms on top of the quinoa and salsa in the tortillas.
