What you'll need:

  • 1 lb (454 g) boneless, skinless chicken breast, sliced thinly
  • 2 tbsp fajita seasoning
  • 2 tbsp olive oil
  • 8 oz (240 g) mushrooms, sliced
  • 1.5 cups (340 g) cooked quinoa
  • 1/4 cup (65 g) salsa

Preparation:

  1. Rub the chicken with fajita seasoning and let it rest at room temperature for 30 minutes.
  2. Heat a large skillet over medium heat, adding 1 tbsp of olive oil. Cook the seasoned chicken until it's nicely browned, approximately 5 minutes. Remove the chicken from the skillet and set aside.
  3. Add another tbsp of olive oil to the same skillet. Add the sliced mushrooms, season them lightly with salt and pepper, and cook until they're tender, about 4-5 minutes.
  4. Mix the cooked quinoa with some salsa in a bowl.
  5. If you'd like, warm up your tortillas.
  6. Assemble your fajitas by placing the chicken and mushrooms on top of the quinoa and salsa in the tortillas.
  7. Dig in and enjoy!
