Chicken Fajita Delight

What you'll need:

  • 1 pound boneless, skinless chicken breast, sliced thinly
  • 2 tablespoons fajita seasoning
  • 2 tablespoons olive oil
  • 8 oz mushrooms (240 g), sliced
  • 1 1/2 cups cooked quinoa (340 g)
  • 1/4 cup salsa (65 g)

Preparation:

  1. Coat the chicken breasts with fajita seasoning and let rest at room temperature for 30 minutes.
  2. Heat a large skillet over medium heat and add 1 tablespoon of olive oil. Add the seasoned chicken and cook until browned, approximately 5 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add another tablespoon of olive oil. Add the sliced mushrooms, season with salt and pepper to taste, and cook until tender, about 4-5 minutes.
  4. In a bowl, mix the cooked quinoa with divided salsa.
  5. Warm tortillas if desired.
  6. Assemble fajitas by placing chicken and mushrooms on top of quinoa and salsa in the tortillas.
