Preparation
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Melt the chocolate in a heatproof bowl set over a saucepan of simmering water, stirring until smooth and shiny. Alternatively, melt the chocolate in a microwave at 30-second intervals, stirring between each one until smooth.
- In a bowl, mix thawed berries, cornstarch, and sugar until fruit is fully coated.
- Roll out thawed puff pastry on a floured surface. On the prepared baking sheet, place the pastry, smear melted chocolate in the center, leaving a 2-inch border, and top the chocolate with the berry mixture. Fold pastry edges over the berry layer, and brush the edges with honey-water mixture.
- Bake for 18-20 minutes, or until the pastry is puffed and golden brown. Remove from the oven, allow to cool, and dust with powdered sugar before slicing. Bon appétit!
Variations and Tips
- Mixed Berry Filling: Choose fresh or frozen berries. Cook mixed berries with sugar and lemon juice until the jam reaches the thread stage for a thick texture.
- Chocolate Filling: Use high-quality dark or milk chocolate. Spread chocolate over the puff pastry, or drizzle it on after baking.
- Puff Pastry Preparation: Ensure the pastry is thawed according to package instructions to avoid cracking.
- Assembly: Spread berry jam to the center, then chocolate and seal with a fork. Brush egg wash for golden edges.
- Baking: Aim for 20-25 minutes at 400 °F (200 °C).
- Glazing: Prepare a vanilla bean glaze for extra sweetness and flavor, and drizzle it over the tart before serving.
