Preparation
- Preheat the oven to 150°C (300°F). Get your cheesecake pan ready by lining it with parchment paper. Make your base by crushing the biscuits and combining them with melted butter and almond extract. Bake for 10 minutes at 180°C (350°F), remove, and let cool.
- Blend the Greek yogurt, sugar, cheese, flour, and vanilla extract together until a loose mixture forms. Gradually add the eggs and yolk, ensuring the consistency doesn't change.
- Divide the mixture into two containers: one medium-sized and one small.
- Place the pan on the top rack of your preheated oven, and bake for 45 minutes at 135°C (275°F).
- Allow the cakes to cool for half an hour before gently removing them from their molds and stacking them layer by layer.
- Cut into slices and serve.
