- 2 1/2 cups grated sweet potatoes (350g), peeled and drained
- 3 cups grated brown potatoes (420g), peeled and drained

- 1 cup sour cream for serving

Preparation:
- Preheat two large, rimmed baking sheets fitted with parchment paper. Set aside.

- If the skillet is dry, add another 1/4 cup oil and repeat the cooking process. Cook the remaining potatoes, adding oil as needed.
- When all potato patties are cooked, reheat the remaining 3/4 cup vegetable oil in a large pot over medium-high heat. Fry the potato patties in batches, allowing each batch to cook for 3-4 minutes or until crispy. Be sure to turn the patties frequently for even browning.
- Remove the fried patties from the oil and drain on paper towels. Season with additional salt, if desired.
- Serve the Confetti Hash Browns with sour cream and applesauce on the side. Garnish with extra chopped chives.
