笑 laughed milk coffee since I was a pint-sized kid. My ol' mom would be sippin' on coffee while I got home from school, so I'd heat up some milk, whip up some Nescafé, and toss in a spoonful of honey. We'd just chill like two old pals, chatting about the day before I'd bounce back out to play some football.

My first drink, a pint of Smithwick's, came at 15. Me mates and I planned it all out. We spruced up - I remember I was rockin' a tank top and a tie to look a bit older - and trotted over to a country pub in Essexford, about five miles from our hometown, Carrickmacross. There, they wouldn't bat an eyelid.
My lovely Melanie and I started dating when we were youngsters. For our first proper outing, I went all out and made beef bourguignon with a yucky, powdery packet mix. I think I grabbed a bottle of Le Piat D'Or, it was the only red wine in the shop.
A few years back, I got paid in wine and paintings for some stand-up shows in Paris. The guy who organized the gigs ran a gallery next to the venue, so I snagged a couple of swanky paintings and ended up with a bottle of Château Latour from 1965, now worth around £700.

While filming Death in Paradise, I got my hands on some excellent Pinot Noir from Sam Neill. He's got his own vineyard, Two Paddocks, in New Zealand, and we hit it off a bit when he was working in Ireland. He's a jack-of-all-trades; he's a top-notch actor, funny as hell, and a great storyteller.
I'd love it if Wes Anderson offered me a job and we broke open a bottle of wine after I signed the contract. I'm also a sports enthusiast - I play a ton of tennis and have always admired Roger Federer, so I wouldn't mind cracking open a cold one with him and learnin' a trick or two on that one-handed backhand.

Friday evenings are cocktail hours. My kiddos, the ones who stick around, stop by or I've got company. I'm fond of makin' good margaritas with Cointreau as the triple sec, Patrón Silver tequila, and lime juice. I don't care for 'em sweet, so I go easy on the agave, if I use it at all. I'll stray a bit and make spicy margs, too.
For my wife's birthday a few years back, I whipped up a new cocktail I named the rusty coalman for no good reason other than it had a rusty color. It had gin I'd infused with coriander for three weeks, vermouth, maraschino and cherry liqueur, garnished with burnt orange and rosemary from the garden. It wasn't a winner, but it looked snazzy and took a lot of effort to make!
I adore vermouth, not so much for the taste, but for the style of the labels. Last year, during a documentary, I visited the islands of Ireland and was given a bottle of Valentia Island vermouth. It's beautiful, with an elegant design, and uses native ingredients from the island. I've been savouring it ever since, with a twist of orange and a splash of tonic.
