Coconut Delights: Kokospancakes for Two

Looking for a tasty, coconutty treat? Look no further than these kokospancakes! This easy-peasy recipe serves up two portions of tender, fluffy goodness that will leave your taste buds tingling.

Ingredients:

  • 1/4 cup kokosmehl (60g)
  • 1 1/4 tsp. weizenmehl (35g)
  • 1 1/4 tsp. kokosflocken (20g)
  • 3/4 tsp. backpulver
  • 1/2 tsp. salz
  • 1/2 cup kokosmilch (100ml)
  • 2 tbsp. kokoslikör
  • 1 drop mandelessenz
  • 2 eggs
  • 1/4 cup zucker (65g)
  • 1 tbsp. butter (30g)

For Frying:

  • 1 tbsp. butter

Toppings:

  • zimt puderzucker (opt.)
  • kokoseis (opt.)

Steps:

  1. In a large bowl, mix together kokosmilch and kokoslikör. In a separate bowl, whisk dry ingredients (kokosmehl, weizenmehl, kokosflocken, backpulver, salz) before adding to kokosmilch mixture.
  2. Melt butter in a microwave and blend in with wet ingredients. Mix thoroughly.
  3. Preheat your oven to 200°C while heating a skillet on medium heat with 1 tbsp. butter.
  4. Pour batter into skillet and cook for 3-4 minutes, then transfer to preheated oven to cook for an additional 10 minutes.
  5. Remove from oven, plate, and serve with your choice of zimt puderzucker, kokoseis, or both!
