Christmas Orangetastic Brownies

Serves 9

  • 1/2 cup (150g) butter
  • 1 1/2 cups (350g) dark chocolate
  • 4 tbsp orange marmalade
  • 4 tbsp malt extract
  • 4 tbsp molasses
  • 1/2 cup (100ml) honey
  • 1/2 cup (100ml) golden syrup
  • 1 cup (150g) brown sugar
  • 4 large eggs
  • 1 cup (125g) flour

Optional Extras:

  • 1 orange for garnish
  • 1/2 cup (100g) unsalted butter
  • 1/2 cup (50g) raw almonds

Instructions

  1. Preheat your oven to 160C.
  2. Slice the orange thinly and then halve the slices. Melt 100g of the butter in a pan, then add the orange slices and almonds. Cook for 5-8 minutes, then drain off any excess liquid on absorbent paper.
  3. In a large saucepan, melt the butter, dark chocolate, orange marmalade, malt extract, molasses, honey, golden syrup, and brown sugar over a low heat until smooth. Remove from heat and allow to cool for 10-15 minutes.
  4. Beat in the eggs one at a time, stirring well after each addition. Add the flour and mix thoroughly.
  5. Pour the batter into a greased baking dish and top with the drained orange and almond slices.
  6. Bake for 40-45 minutes, then transfer to a wire rack to cool.
  7. Serve warm.
