Roasted Chicken Fried Rice
For a crowd of 4, this flavorful Chicken Fried Rice recipe is a must-try! The chicken breasts are marinated and then stir-fried with vegetables and rice. Top it off with sesame seeds and green onions for the perfect taste.
Ingredients for Chicken Marinade:
- 2 lbs chicken breasts, cut into medium-sized pieces
- 1/3 cup Greek yogurt
- 1 tablespoon lemon juice
- 1 tablespoon vegetable oil
- Salt, as desired
- 1 tablespoon ginger-garlic paste
- 1 tablespoon red chili powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon roasted cumin powder
- 1/4 teaspoon coriander powder
Ingredients for Rice:
- 2 cups Basmati rice, soaked for 2 hours
- 3 cups chicken broth
- 1 teaspoon garlic, pressed
- 1 jalapeño, finely chopped
- Salt, as desired
- 4 tablespoons vegetable oil
Vegetable Mix:
- 1 cup carrots, grated
- 1 cup bell peppers, sliced
- 1 cup cabbage, shredded
- 1 bunch green onions, chopped
- 1 tablespoon garlic, minced
- 1/2 tablespoon jalapeño, finely chopped
- 1 tablespoon soy sauce
- 1 tablespoon white vinegar
- 1 tablespoon oil
Mayonnaise-Sriracha Sauce:
- 2 tablespoons mayonnaise
- 1 teaspoon tomato ketchup
- 1 teaspoon Sriracha sauce
- 1 pinch charcoal powder, for smoky flavor (optional)
Instructions:
- In a large bowl, mix together the ingredients for the chicken marinade, except for the chicken. Add the chicken pieces and let them marinate in the refrigerator for at least 1 hour, or up to overnight.
- In a large pot, drain and rinse the soaked rice. Add the chicken broth, pressed garlic, jalapeño, and salt. Bring to a boil over high heat, then reduce to low and let simmer until the rice is cooked and the water is absorbed. Set aside.
- In a separate pan, heat 2 tablespoons of oil. Add the marinated chicken pieces and cook until golden brown. Remove from the pan and set aside.
- In the same pan, add 1 tablespoon of oil. Stir in the garlic and jalapeño. Add the grated carrots and sliced bell peppers, and sauté for 3-4 minutes.
- Add the shredded cabbage and cook for another 2-3 minutes.
- In a separate pan, heat 1 tablespoon of oil. Add the chopped green onions and cook until softened. Set aside.
- In a small bowl, mix together the mayonnaise, tomato ketchup, Sriracha sauce, and charcoal powder (if using).
- In a large bowl, combine the cooked rice, vegetables, cooked chicken, and cooked green onions. Stir to mix well.
- Drizzle the mayonnaise-Sriracha sauce over the rice mixture and stir until well coated.
- Serve the Chicken Fried Rice warm, garnished with additional green onions and sesame seeds if desired.
