Chicken Chili Soup with a Kick

What you'll need:
- 2 tablespoons of Avocado oil
- 1/2 small onion, chopped

- 5 cups of chicken broth
- 2 tablespoons of butter
- 3 chicken breasts, boneless and skinless
- 1 can of Rotel-Tomatoes with green chilies
- 1 can of drained corn
- 2 cups of shredded cheddar cheese
- 1 cup of sour cream
- 1 tablespoon of chili powder
- 1 tablespoon of cumin
- 1 tablespoon of dried oregano
- 1/2 tablespoon of salt
- 1/2 tablespoon of black pepper

Preparation
- Heat the Avocado oil in a large pot over medium heat. Add the chopped onion and green bell pepper and cook for 2-3 minutes until softened.

- Add the chicken breasts to the pot and reduce heat to a simmer. Cook for 10-15 minutes until the chicken is cooked through, then remove from the pot and let cool.
