Chatham Bars Inn Redefines Luxury with Bespoke Spirits and Rare Wines

Chatham Bars Inn has spent nearly a decade crafting a unique drinks programme for its guests. The luxury hotel now offers everything from custom spirits to exclusive wine weekends. Each bar and lounge features its own bespoke beverages, designed to stand out.

Around eight years ago, the 217-room property began partnering with premium spirits brands to create one-of-a-kind drinks. Today, its collection includes private-label bourbon, vodka, gin, tequila, rum, Cognac, and Armagnac. A standout is the custom barrel of Hillrock Estate Distillery Bourbon, aged exclusively for the inn.

The hotel's wine list spans over 800 labels from around the world, including rare Armenian and Georgian selections. Plans are now underway to expand its red wine offerings, focusing on Bordeaux, Burgundy, Barolo, and Tuscany. For something lighter, guests can try the inn's own rosé—a Côtes de Provence blend designed as an aperitif or food pairing. Local breweries also feature prominently, with collaborations from Devil's Purse, Hog Island, and Tree House Brewing. Each of the hotel's bars has its own signature drinks, like the Provencal rosé at the Beach House Grill or the special brews served on The Veranda. Off-season events now include themed weekends, such as a wine-focused gathering with producers like Veuve Clicquot and Joseph Phelps. For spirits, the inn's partnership with St. George Spirits provides unique cocktail ingredients. A recent addition is the single-barrel Planteray Rum, smooth enough to sip neat or mix into cocktails.

The hotel's drinks programme continues to grow, blending global wines, local beers, and custom spirits. Guests can now enjoy exclusive tastings, themed weekends, and a carefully curated selection of rare and regional beverages. Each addition reflects the inn's commitment to offering distinctive experiences for visitors.
