Pollo Fajita and Quinoa Burrito for Two

Ingredients

  • 455g boneless, skinless chicken breasts
  • 2 tablespoons Fajita seasoning
  • 2 tablespoons olive oil
  • 1 small red bell pepper, seeded and sliced
  • 1 small green bell pepper, seeded and sliced
  • 1 small yellow onion, sliced

Preparation

  1. Combine the chicken with Fajita seasoning and 2 tablespoons of olive oil, then let it marinate at room temperature for 30 minutes.
  2. Heat a large pan over medium heat and add marinated chicken breast. Cook until the chicken is slightly browned, around 5 minutes.
  3. Add the sliced bell peppers, onion, and cook for an additional 5 minutes until they soften.
  4. Remove the pan from heat. In a large mixing bowl, combine the cooked quinoa and salsa.
  5. Add the cooked chicken-vegetable mixture to the bowl with the quinoa and salsa. Mix thoroughly.
