Rohed's Beans and Sausage Affair

Serves 6

Ingredients:

  • 1 Lb (500g) soaked beans
  • 1/2 Lb (250g) sliced sausage
  • 1 chopped onion
  • 1 ripe tomato, chopped
  • 1 carrot, chopped
  • 2 medium-sized potatoes, diced
  • 2 chili peppers (green and red), finely chopped
  • 3 garlic cloves, minced
  • 1 smoked pork bone
  • 2 bay leaves
  • 1 quart (1L) water
  • 1 bell pepper, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Preparation:

  1. Sauté the onion and garlic until softened and fragrant in olive oil.
  2. Add sausage and brown it with the aromatics for a few minutes.
  3. Add soaked beans, bell pepper, chili peppers, carrot, and tomato to the pot. Season with salt and pepper.
  4. Pour in water, add smoked pork bone and bay leaves.
  5. Cook on high heat until boiling, then reduce the heat and let simmer for two hours. Stir in diced potatoes and continue cooking for another half hour.
  6. Remove smoked pork bone and bay leaves before serving.
