Preparation
- Preheat the oven to 250°F (120°C), and grease a 33 x 22 x 5 cm baking dish with butter.
 - Place the bread pieces in a single layer on a baking sheet with sides and bake for 1 hour, with occasional stirring, until dry. Allow to cool and transfer to a large bowl.
 - Preheat the oven to 350°F (170°C). Melt the speck fat and butter in a pan over medium heat. Sauté the sausage meat for about 5 minutes until browned, and remove from the pan.
 - Add onions to the pan and cook for 5 minutes, then add leeks and carrots. Cook for another 5 minutes. Allow to cool slightly.
 - Whisk the eggs, parsley, marjoram, thyme, salt, and pepper in a mixing bowl. Add the sautéed vegetables and sausage meat to the bowl, and stir to combine.
 - Pour 3/4 cup of chicken broth into the mixing bowl and stir until well combined. Transfer the mixture to the prepared baking dish.
 - Pour the remaining chicken broth over the top of the mixture in the baking dish. Cover tightly with foil and bake for 30 minutes.
 - The dish can be stored in the refrigerator until serving. To finish, preheat the oven to 350°F (170°C), remove the foil, and bake for an additional 10 minutes until golden brown.
