Ingredients (Makes 8 servings)

  • 8 pieces of white bread, unsliced and cut into 2½ cm squares

  • 4 leeks, sliced
  • 4 cups grated carrots

  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs
  • 1 1/4 cups chicken broth

Preparation

  1. Preheat the oven to 250°F (120°C), and grease a 33 x 22 x 5 cm baking dish with butter.
  2. Place the bread pieces in a single layer on a baking sheet with sides and bake for 1 hour, with occasional stirring, until dry. Allow to cool and transfer to a large bowl.
  3. Preheat the oven to 350°F (170°C). Melt the speck fat and butter in a pan over medium heat. Sauté the sausage meat for about 5 minutes until browned, and remove from the pan.
  4. Add onions to the pan and cook for 5 minutes, then add leeks and carrots. Cook for another 5 minutes. Allow to cool slightly.
  5. Whisk the eggs, parsley, marjoram, thyme, salt, and pepper in a mixing bowl. Add the sautéed vegetables and sausage meat to the bowl, and stir to combine.
  6. Pour 3/4 cup of chicken broth into the mixing bowl and stir until well combined. Transfer the mixture to the prepared baking dish.
  7. Pour the remaining chicken broth over the top of the mixture in the baking dish. Cover tightly with foil and bake for 30 minutes.
  8. The dish can be stored in the refrigerator until serving. To finish, preheat the oven to 350°F (170°C), remove the foil, and bake for an additional 10 minutes until golden brown.
