  • 1/4 teaspoon kosher salt

Yellow Teig

  • 1/4 cup warm water (60 ml)
  • 1/4 teaspoon yellow food coloring
  • 1/4 teaspoon instant yeast
  • 1/2 teaspoon brown sugar
  • 2/3 cup all-purpose flour (85g)
  • 1/4 teaspoon kosher salt

Green Teig

  • 1/4 cup warm water (60 ml)
  • 1/4 teaspoon green food coloring
  • 1/4 teaspoon instant yeast
  • 1/2 teaspoon brown sugar
  • 2/3 cup all-purpose flour (85g)
  • 1/4 teaspoon kosher salt

Blue Teig

  • 1/4 cup warm water (60 ml)
  • 1/4 teaspoon blue food coloring
  • 1/4 teaspoon instant yeast
  • 1/2 teaspoon brown sugar
  • 2/3 cup all-purpose flour (85g)
  • 1/4 teaspoon kosher salt

Purple Teig

  • 1/4 cup warm water (60 ml)
  • 1/4 teaspoon purple food coloring
  • 1/4 teaspoon instant yeast
  • 1/2 teaspoon brown sugar
  • 2/3 cup all-purpose flour (85g)
  • 1/4 teaspoon kosher salt

Water Bath

  • 8 cups water (1.9 kg)
  • 1 teaspoon baking powder
  • 1 teaspoon all-purpose flour

Instructions

Red Teig

  1. Mix warm water and red food coloring until the color is evenly distributed.
  2. Sprinkle instant yeast over the water and stir.
  3. Add brown sugar, all-purpose flour, and kosher salt, stirring until a ball forms.
  4. Knead for 1-2 minutes until smooth.
  5. Set aside and repeat the process for the remaining colors.
  6. Once you have all the colored doughs, let them rest for 10 minutes.

Mixing the Colors

  1. Place the violet dough on a lightly floured surface.
  2. Roll out the violet dough into a 20 x 15 cm rectangle.
  3. Roll out the blue dough to a similar size and place it on top of the violet dough, aligning the edges.
  4. Repeat this process with the green, yellow, orange, and red doughs, keeping the edges aligned.
  5. Press gently to make sure the layers stick together.
  6. Cut the rectangle into 6 equal strips, each 2.5 cm wide.
  7. Create a circular shape by rolling each strip back and forth with your fingers.
  8. Plait the strands and join the ends together to form a bagel.
  9. Repeat this process with the remaining dough.

Water Bath

  1. Bring 8 cups of water to a boil.
  2. Mix baking powder and all-purpose flour in a small bowl.
  3. Add this mixture to the boiling water.

Cooking the Bagels

  1. Preheat your oven to 200°C (400°F).
  2. Cook the bagels in the water bath for 40-45 seconds.
