A renowned Indian chef pays a visit to Cafe Boulud
Café Boulud, the renowned French restaurant in New York City, has embarked on an exciting culinary journey with its latest offering - the Voyage to India menu. This menu is part of the restaurant's Le Voyage series, which showcases exotic flavours from the world's great cuisines, including Indian cuisine.
Executive Chef Romain Paumier leads the kitchen at Café Boulud, delivering refined, globally inspired dishes that are a testament to the restaurant's commitment to innovation. Named after Chef Daniel Boulud’s family's original café in Lyon, France, Café Boulud seamlessly blends classic French cooking with international influences, as evident in the Indian-inspired offerings on the Voyage menu.
The Voyage to India menu features an elegant fusion of flavours characteristic of Indian cuisine, all presented with the superior culinary finesse that Café Boulud is known for. The menu includes dishes like makhani gobi and lamb shoulder rogan josh, all approved by chef Amninder Sandhu, the acclaimed chef at Arth Restaurant and Lounge, one of India's most famous restaurants.
Chef Aaron Bludorn, the creator of the Voyage menu project, was seen gathering ingredients for chef Sandhu's menu at Patel Brothers in Jackson Heights. The kitchen staff at Café Boulud sources ingredients for the Voyage menus from various locations, reflecting the restaurant's dedication to authenticity and diversity.
The first course of Sandhu's Voyage to India menu was "Stuffed Kashmiri Morels," a dish that showcased the chef's commitment to preserving the diversity of Indian cuisine. The morels were filled with a smoked duxelles, a preparation of mushrooms, onions, shallots, garlic, and parsley, creating a unique and delicious blend of flavours.
The rest of the menu was served family-style, including Kovalam lobster, chole kulche, raan biryani, and Amritsari kulcha. For dessert, there was smoked black cardamom ice cream atop a minced meat preparation called gosht ka halwa, providing a sweet ending to the culinary adventure.
The Voyage to India menu at Café Boulud is open to all guests, offering a unique dining experience that is both educational and enjoyable. The Voyage menus are designed to be a learning experience for the kitchen staff, allowing them to explore and understand different cuisines, while providing guests with a taste of the world's diverse culinary offerings.
The Voyage menu project at Café Boulud invites chefs from different cuisines to collaborate, including Pierre Thiam, Hooni Kim, Hiroko Shimbo, Esdras Ochoa, Rick Lopez, Eduardo Morali, and Jason Goodenough. This collaboration not only enriches the dining experience but also fosters a spirit of camaraderie and mutual learning among the culinary community.
Chef Daniel Boulud joked about morels being smuggled in at Café Boulud, but the restaurant's commitment to authenticity and diversity is clear. The Voyage to India menu, now available at Café Boulud, is a testament to this commitment and a must-try for anyone seeking a culinary adventure.
